Roasted Rooibos Herb Chickpeas

A Healthier Snack Alternative

Skip the packaged snacks and give roasted chickpeas a try! Oven roasting chickpeas brings their flavor to a whole new level. Chickpeas are the ultimate alternative to popcorn while still curbing the craving for something salty. They are perfect for movie-time munching and best served warm out of the oven. 

Chickpeas are a great source of fiber and protein that help keep you full. This round legume is mild in flavor, lending itself to be flavored with sweet or savory spices. Once the chickpeas are roasted, they can be enjoyed alone or added to salads in place of croutons. 

In order to achieve ultimate crunchiness, chickpeas are patted dry to remove any moisture and dry roasted for 25-30 minutes. This causes the chickpeas to dry as they roast resulting in a crunchy texture. Removing any loose outer skins from the chickpeas will also ensure they are as dry as possible before roasting. 

Next, the chickpeas cool in the oven with the door cracked to slowly bring their temperature down. The dry herbs for this recipe give the chickpeas a ranch-style coating with robust rooibos tea notes. Rooibos is a red tea that is known for its immune-system supporting benefits. Rooibos contains rare antioxidants that help support optimal digestion and a balanced gut microflora.

Ingredients

  • 2 15 oz cans chickpeas, drained
  • 1/2 tsp olive oil
  • 1 sachet Pique Rooibos tea crystals
  • 1/2 tsp dried basil
  • 1/4 tsp dried thyme
  • 1/4 tsp dried dill
  • 1/8 tsp dried garlic
  • 1/2 tsp sea salt

Instructions

  • Preheat oven to 400ºF. Pat chickpeas dry with paper towel and remove any loose outer skin from chickpeas. Spread on a baking sheet. Bake chickpeas for 25-30 minutes, stirring halfway through roasting. Turn off oven and allow chickpeas to cook in oven with door cracked for 10 minutes.
  • Stir together tea and dried herbs/spices. Toss chickpeas in olive oil followed by herb mix and stir to coat. Enjoy warm.
