Pineapple Matcha Drink

This refreshing tropical drink is chock full of antioxidants and made with just 4 ingredients!  It’s the perfect summer sipper to keep you hydrated, sweetened only with pineapple juice. 

This copycat version of a popular barista beverage ditches added sugar and uses a small amount of naturally sweet pineapple juice. Pineapple juice adds whisk-me-away tropical notes to this beverage and a dose of antioxidants. Look for pineapple juice that doesn’t contain added sweetener and is 100% pineapple juice. 

Matcha tea gives the beverage its vibrant green hue and adds its own unique antioxidants. Matcha tea contains an amino acid called l-theanine that is known for its ability to produce a calm, focused energy. This paired with a small amount of caffeine will give a jitter-free boost to your day. This variety of tea is best enjoyed in the morning or as an afternoon pick-me-up. 

Coconut milk adds a light, creamy element to the drink. The variety in this recipe is from the type of coconut milk found in a carton in the refrigerated section of grocery stores. Canned coconut milk can be used, but it may separate easily because of the ice and its higher fat content. 

While this beverage is alcohol-free, it can absolutely be enjoyed as an adult cocktail with the addition of white rum or vodka.

Ingredients
  • 4 oz. pineapple juice
  • 1 sachet Pique Sun Goddess Matcha
  • 1 cup ice
  • 1/2 cup unsweetened coconut milk
Instructions
  1. Combine pineapple juice and matcha in a 16-ounce glass and stir to dissolve matcha. Add ice and milk. Enjoy!
