Bliss balls are an indulgent treat that’s the perfect size for satisfying a sweet tooth on the go. This carrot cake inspired recipe is vegan and Paleo-friendly without any added dairy. These two bite treats are great for anyone who isn’t a fan of chocolate but still wants a sweet snack every now and then. Best of all, they’re no-bake and ready in less than 30 minutes!
Satisfy Hunger with Fiber and Healthy Fats
Although these truffle-sized balls are tiny, they pack in a lot of flavor with the added benefit of filling fiber thanks to pecans and almond flour. They also contain a dose of healthy fats with virgin coconut oil. Coconut oil naturally hardens when it is chilled, helping to firm up the bliss balls.

Be sure to purchase dried pitted dates and not the fresh variety. Soaking the dates before blending softens them and makes them easier to break up in the food processor. Dates can also be used in homemade dessert bars, brownies and blended in smoothies.

- 2/3 cup dried dates pitted
- 1 cup carrots shredded
- 1 cups raw pecans halves
- 1/2 cup blanched almond flour
- 2 tbsp coconut oil virgin, unrefined
- 1 sachet Pique Ginger Digestion tea
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp sea salt
Soak dates in 1 cup of hot water for 5 minutes. Drain dates and add to a food processor. Pulse until dates are crumbled. Add tea crystals and remaining ingredients and continue to blend for 10-15 seconds or until thoroughly mixed and pecans are finely chopped.
Form mixture into small balls using a tablespoon measuring scoop and place on a parchment paper-lined tray. Transfer to the freezer for 15 minutes to set. Enjoy!
